Welcome (back) to the blog and thanks for taking the time to stop by on another Meatless Monday. We at Planet Forward took the pledge to support this sustainable practice that promotes eliminating meat from your diet one day per week with the goal of reducing meat consumption by 15% to improve personal and planetary health. A small sacrifice for big reward.

Do you have a hard time getting your kids to eat broccoli?  If so, then cavatelli with broccoli and cream is the perfect receipe for you. This quintessential Italian dish comes from Cake Boss Buddy Valastro’s new TLC show Kitchen Boss and is just as delicious as it is easy to make but you don’t have to take my word for it. Let’s get cooking and you’ll see for yourself.

Ingredients

  • 4-5 cups broccoli florets and tender leaves
  • 3 plump cloves garlic, mince
  • 2 Tablespoons olive oil
  • 1 pound fresh or frozen cavatelli
  • Grated parmesan for mixing and serving

Preparation:

  1. Bring a large stockpot of salted water to the boil. Blanch the broccoli – cook more than al dente stage, but not to a mush. Remove and shock the broccoli in ice water to stop cooking. Keep water at a simmer. Use the same water to cook cavatelli.
  2. Heat a large sauté pan with enough capacity to contain all of the sauce, broccoli and pasta over medium. Add the olive oil and garlic and cook over low heat, just to flavour the oil with the garlic. The garlic should not burn.
  3. Meanwhile, cook the cavatelli per instructions al dente. Drain into a bowl, and add broccoli, some cheese and the garlic oil. Toss to combine and serve with plenty of grated parmesan on the side.

This recipe for cavatelli with broccoli and cream will yield about four portions and can be easily adjusted. If you cannot find either fresh or frozen cavatelli, potato gnocchi or orecchiette will work well as a substitute. Don’t be afraid to swap in other “short” pastas if you prefer a spelt, whole wheat or brown rice pasta option. Complete this offering with a side salad dressed with light vinaigrette as the pasta to cut the creaminess of the pasta dish.

eco-friendlyWhat happens to educated, successful and obviously employable women when they get engaged? It would seem the immediate hunt for the perfect dress begins. This is not just any dress – it must be a drop-dead-stunning-ball-gown that also falls within their budget which sometimes is very unreasonable. I like to think that most of us have an eco-friendly outlook and I would hope that many would be striving to decrease their carbon footprint.  Why does there seem to be a disconnect when it comes to buying the perfect dress?

wedding-gownsFor this dress-buying task there is only one place in North America that seems to fit the bill – the wonderland of bridal couture, otherwise known as Kleinfeld Bridal. Kleinfeld is a name you may know from the TLC show Say Yes To The Dress.  It is a place that treats every bride like a princess (insert eye roll). The hunt for the wow-dress that these brides seem to be on, once was a private affair but thanks to TLC, they’re proving exploitable as well.  Remember, TLC are the same people that brought the plague of Jon and Kate Plus 8 to the world.

The show highlights the good, the sweet and the bridezilla.  What is shocking is not just the price tags of these gowns, as many brides seem to smash their budget for the perfect dress, but the lengths they will go to, to get the dress. Apparently many believe that Kleinfeld is the only store that will have the dress they need in order to be able to get married so brides come from far and wide. Brides will trek by boat, plane, train or automobile to bring their one-wear-only dress back home. They come in clicks, sororities, families and sometimes even with their fiancés. One bride flew all the way from London to buy a dress and then left without a dress, as she was not able to afford it. Another bride drove ten hours to get to Manhattan from Salem North Carolina to get to Kleinfeld, with her whole bridal party in tow.

red-hot-and-green-with-carter-oosterhouseDo you remember the uber cute carpenter Carter Oosterhouse from the TLC show Trading Spaces? Well, Carter is back in a big way and with an eco-friendly television show:  Red, Hot & Green.  On the Rachel Ray Show, Carter performed an eco-friendly makeover of actor John Stamos’ Broadway Dressing room.  John Stamos, best known for his roles on Full House and ER, is currently starring in the Broadway revival of Bye Bye Birdie.  Carter was given a mere 48 hours to give makeover to this barren dressing room. John asked for a late 1960’s Hollywood glam vibe for his home away from home. Carter achieved this look by using a dark grey wallpaper, as he feels that wallpaper adds an artistic element to a room. He then added lighter colored squares of wallpaper on the focal wall to brighten up the space. The remodel included building shelves etc… out of MDF (medium density fiberboard).

Now in the past MDF was not an eco-friendly product but Oosterhouse used a new green MDF which boosts a non-toxic adhesive to join all the fibers together. The dressing rooms’ grand reveal was everything Stamos had asked for and more.  It was masculine but with a definite sense of style and an eco-friendly slant.  Oosterhouse used a color palette black, white, and grey with red as an accent color. “Spectacular” said Stamos of his renovated dressing room. John’s favorite element was that he has a space he can relax in, which will still accommodate guests.
