Meatless Monday Recipe for Avocado Tacos
ByHappy Meatless Monday! Another week, another vegetarian recipe. As you may or may not know, we support the Meatless Monday campaign – a non-profit initiative in association with the Johns Hopkins Bloomberg School of Public Health. It’s part of an eco-friendly worldwide movement to reduce consumption of animal products in favor of more plant-based meals to fight global warming and improve our personal health. This week we bring a popular dish made vegetarian for you to try.

Avocado and Black Bean Tacos
Ingredients
- 3 avocados – peeled, pitted, and mashed
- 1/4 cup onions, diced
- 1/4 teaspoon garlic salt
- 12 (6 inch) corn tortillas
- 1 bunch fresh cilantro leaves, finely chopped
- Jalapeno pepper sauce, to taste
- Optional: add traditional taco favorites like lettuce, cheese, black beans, diced fresh tomatoes
Directions
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, mix avocados, onions, and garlic salt. Optional: squeeze in a little lemon for some added flavor.
- Arrange corn tortillas in a single layer on a large baking sheet, and place in the preheated oven 2 to 5 minutes, until heated through.
- Spread tortillas with the avocado mixture. Garnish with cilantro and sprinkle with jalapeno pepper sauce.
Add lettuce, cheese, black beans and tomatoes for additional flavor! Serve with rice and/or salad.
One of the best things about this recipe is that it’s easy. With a preparation time of 20 minutes and a cook time of 5 minutes, it’s ready in 25 minutes!
