Hello fellow green living gardeners. I am writing today as I find myself at an impasse. The summer is coming to an end and as the harvest approaches my quandary is this; should I plant garlic in the fall? We all know that garlic is delicious and an integral component to any Italian dish, but did you know of its health benefits? Garlic is an antioxidant like the blueberry which tends to garner all the attention.

As you may (or may not) have read, antioxidants are believed to help ward off heart disease, cancer and even prevent premature aging. Apparently garlic can do all that plus help lower your bad cholesterol, is good for diabetics and can help those with a blood pressure problem. That’s a whole lot of goodness packed into that clove.

When adding garlic into your diet you should know a few simple facts:

1. The smaller garlic is chopped or diced the more pungent it is
2. Store unpeeled garlic in an open container in a cool, dry place away from other foods
3. Whole unpeeled cloves should never be refrigerated or frozen because moisture is a natural enemy to the garlic clove. There is a loophole to this fridge rule though. To save time you can store peeled cloves in a sealed airtight container in the fridge, this helps when cooking in a hurry during the week (say for Meatless Monday). However, garlic should not be store in the fridge for long periods of time. I would say no longer than a week to ten days.

So with all this goodness, why am I debating growing this miracle food when it should be a no brainier? I had heard that when growing garlic in Canada, it does best when planted in the fall about three weeks before the first frost or when the ground is still slightly pliable. One is able to grow garlic by planting the individual segments of cloves in the soil. This all sounds good especially because your garden is dormant in the long, cold, harsh winter months. Well I think that may not really the case as I have learned that garlic in this region is best harvested in mid July. Seeing as most people plant on the May twenty-fourth long weekend, depending on the weather conditions, I would be losing a patch of land for a long period of time. A patch that is perfect for plants like tomatoes to be able to grow properly.

I have a few more trepidations about this endeavor. The work of growing garlic is not over in mid-July either. The work of a garlic farmer is never done or so I have researched. Crops, once harvested, must be hung in the shed or other cool, dry, dark place to dry before reaching their pique which is some time in late July early August. That is why many garlic festivals are normally in the late August and early September. Therefore in the end, this would be quite the endeavor to undertake. If you read this blog regularly you know that although my heart is in the right place often my garden tends to have a mind of it’s own and I fear that could happen with the garlic.

Another alternative would be having a dedicated plot away from my garden. I started thinking what would become of the little plot of land where the garlic once grew when it is harvested? I figured I could always grow lettuce, even from seed it only takes a few weeks before you are able to cut it. I have successfully planted lettuce from seeds in the past, even in late August and if it is warm enough have been cutting well into September. 

Looking at all the pros and cons I feel that I would love to grow garlic. I just have to find ways to not accidentally uproot the garlic before it is finished. I wonder if planting it in a planter will work? I guess a little more research is needed because I would hate to have another garden fiasco like the bussel sprouts and the Sicilian Zucchini. If you have any garlic expertise and have any tips, tricks or knowledge please share it with me. I am really leaning towards undertaking this endeavor! Following on from yesterday’s story about the proposed environmental grading stickers that may be added to new vehicles in 2012, the first complaints from the automobile industry are already being registered. As I wrote yesterday the proposal is for a grading system based upon emissions, vehicle range, fuel economy and annual cost of operations. At this point the idea remains a joint proposal from the Environmental Protection Agency and the Department of Transport, although not confirmed dealers have been quick to respond in a negative fashion. The grading system would simply bring the US auto industry in line with what is already happening in Japan and Europe and yet the response to the proposed change has caused some immediate panic from car dealerships .

The knee-jerk reaction appears to be driven by the fact that only a few cars (typically electric or hybrid vehicles) would receive a grade above a ‘B’ with the A+ designation reserved exclusively for electric vehicles. A dealer in Massachusetts feels the information will cause confusion and lost sales for his dealership:

“Anything that’s not an A is bad, right? It’s misleading to the consumer. I could be so customer a D (rated vehicle) but if you are driving mostly on the highway it could be an A”

A second dealer agreed and suggested that the car industry should receive support from the government in terms of stimulating sales as opposed to devising new environmental labels:

“I think it’s foolish and more government intervention where it doesn’t need to be, people aren’t idiots”

While I do understand car dealers may not be very responsive to change, I think the key message is being entirely missed. The idea and value of the labeling (which admittedly is very large and bold) is to heighten public awareness about fuel economy and environmental impact, the playing field will be level in terms of evaluation for each individual vehicle and the final decision naturally will rest with the consumer. What I feel is probably causing the reaction is the perceived stringency of the grading system, where previously miles per gallon or kilometers per litre were the only shared information in an immediate fashion now a consumer will see an overall environmental rating based upon emissions, vehicle range and running costs. If anything it will move the understanding of vehicle impact to a better place in the public forum, consumers will still shop for specific vehicles based upon their needs but when the final comparison is made between cars the relative eco-friendly aspects will be considered in the buyer’s equation. Surely that is a good thing?

Perhaps car dealers should be looking internally as to how the manufacturers themselves can develop vehicles which receive higher grades rather than immediately crying foul and saying sales will be impacted. If sales are indeed impacted it will primarily be for vehicles that perhaps need a full redesign.

It might seem too obvious to even be necessary or you may argue that anybody who watches the news or reads it occasionally is more than aware of the need for more environmentally friendly cars. In essence that’s true but nevertheless the US government might be adding an eco-grading system for all new vehicles that are placed on the market starting in 2012. It’s not a bad idea and at least takes away from the dealer hype or any risk of misinformation. All consumers should know the overall environmental rating for a new car purchase via a scale that is not biased toward a particular manufacturer or vehicle type but will truly be able to compare apples with apples or if the mileage is really bad lemons with lemons.

The Chevy Volt which we’ve discussed at some length looks set to corner the electric market in 2012 and from their website I wanted to share the proposed new vehicle credentials that will appear on all new cars in showrooms and lots throughout the country, however I don’t see a grade on this example but I assume it to be an A+. I think the idea looks pretty useful and really does focus on a few critical areas; annual fuel costs, range of the vehicle, emissions from the vehicle. The combination of these three factors will allow the buyer to make more rational and informed decisions when shopping for cars especially when considering the lifespan of the vehicle and the environmental impact of owning it. There is also something to be said for seeing in black and white (and green) the annual fuel cost savings which when married to the emissions statistics should add even more heightened appeal to certain specific cars.

The labeling system is being proposed as a joint collaboration between the Transportation Department and the Environmental Protection Agency. Each passenger car would receive a grade between an A+ and a D with the grading based upon the factors I’ve outlined above. The initial reports state that only electric cars would be eligible for an A+ rating while certain plug-in hybrid cars could receive a classification as high as and A. The information is certainly more useful than the current MPG designations for urban and highway driving which only allow a certain level of insight to the vehicles green performance. It is expected that the traditional family car would receive a grade of B or C under the proposed standards, according to the EPA the primary goal is to simplify the evaluation process for environmental standards so that consumers can readily acquire the information they need to make an easier and more informed decision about their new car.

Hopefully the market itself will pay as much attention to this labeling system if it becomes a reality as they do when looking at video screens, stereo systems and trunk space when they go shopping for a new car. I also think the idea is long overdue and can only enhance the appeal of the more fuel-efficient vehicles that the market so desperately needs. I’m tempted to speak about the anticipated spike in fuel prices that experts are forecasting for 2013 but I’ll save that for another post. We’ll be watching to see if this gets approved as ideally it shall.

I’ve never been one who really enjoys an extended period of time in a confined space therefore going on a cruise has never held particular appeal to me. I’ve been on ferries crossing the Irish Sea and the North Sea to visit Ireland and Europe but always using the ship as a method of transport not as a  holiday. Naturally without my participation the cruise industry is still huge and growing on an annual basis. While I lived in Los Angeles I marveled at the size of the magnificent ships harboured in San Pedro waiting like sentinels to take their cargo of two or three thousand holidaymakers down the Pacific Coast to various Mexican and Central American ports of call. I never realized until reading a recent article that sewage from these huge vessels was not previously restricted for dumping in coastal waters.

Happily new federal regulations will now ban all cruise ships and larger commercial ships from discharging their sewage within 3 miles of the California coastline according to the US Environmental Protection Agency. The laws come into play in 2011 and it is estimated that the results will keep approximately 20,000,000 gallons of sewage away from coastal waters annually. In addition to cruise ships commercial boats in excess of 300 tons will also be subject to the same rulings. The US Coast Guard will also have the authority to charge vessels with sewage violations. Naturally enough when a cruise ship with sometimes as many as 4000 passengers takes to the seas it becomes the equivalent of a small city offshore and all the resultant pollution that goes with that many residents.

Many cruise lines are stating that the ban will have little impact as they already have internal policies which reflect an earlier law that was passed in 2005 with many operators now keeping sewage in large tanks to either dump further out at sea or transferred to wastewater treatment facilities. Nevertheless the impact on commercial vessels should also help the water quality on the Pacific coast that has continued to deteriorate in recent decades. The law makes perfect sense especially when stringent laws have already been passed to reduce runoff from rivers and sewage centers and pipes that are onshore.

I still don’t think it’s enough to make me want to jump on a 10 day cruise and have dinner with strangers every evening but it’s good to see the EPA holding the cruise industry to task when it comes to environmental matters. Surely the best procedure of all would result in banning the discharge of sewage anywhere on the seas rather than just the coastal barrier that has now been more properly enforced. One step at a time but it’s most certainly a step in a positive direction.

Happy Meatless Monday! Are you short on time? Do you want a meal that you can make in about twenty-five minutes? Do you also want it to have fewer than five ingredients? If you answered yes to all or most of these questions, then you may want to try this roasted tomato bread soup with a white bean salad. Why a soup? It’s perfect comfort food for a rainy, overcast summer day plus produce tastes best in the summer. These recipes come from Claire Robinson of the Food Network show 5 Ingredient Fix. Both recipes have five ingredients because you never count salt and pepper. Both dishes are family friendly as they are fresh and have great texture.

Roasted Tomato-Bread Soup Ingredients
1 pound vine-ripened tomatoes, quartered and seeded
3 tablespoons garlic-infused extra-virgin olive oil, plus more for garnish
Kosher salt and freshly ground black pepper
1/2 cup finely sliced fresh basil leaves, plus more leaves for garnish
1(28-ounce) can crushed tomatoes (recommended: San Marzano)
1 1/2 cups water
1/2 loaf sourdough baguette (day-old) or 1/4 loaf country bread, torn into 1/2-inch pieces (about 3 cups)

White Bean Salad Ingredients
1 red bell pepper
1 (15-ounce) jar stewed cannellini beans, drained
2 large heads Belgian endive (red or green or a combination), trimmed and thinly sliced
1 lemon, zested and juiced
2 tablespoons garlic-flavored olive oil
Kosher salt and freshly ground black pepper

Roasted Tomato-Bread Soup Directions
Preheat the oven to 400 degrees F. Put the tomatoes on a rimmed baking sheet, toss with 2 tablespoons of the garlic oil and season with salt and pepper, to taste. Roast until the tomatoes are softened and the edges are beginning to brown, 15 to 20 minutes. Meanwhile, heat 1 tablespoon of the garlic oil in a saucepan over medium-high heat. Add the basil and stir for about 30 seconds. Add the canned tomatoes with their juice and the water; season with salt and pepper, to taste. Bring to a boil, then reduce the heat to medium-low and simmer for 15 minutes. Stir in the bread and simmer for 2 to 3 minutes. Stir the oven-roasted tomatoes and any cooking juices into the saucepan and simmer for another 3 minutes. Taste for seasoning, adjusting if necessary, and ladle into serving bowls. Garnish with a drizzle of garlic olive oil and basil leaves.

White Bean Salad Directions
Roast the bell pepper until charred (either over a gas flame, grill or broiler). Peel, stem, seed and chop into a bean-size dice. Put the beans, red peppers, endive and lemon zest into a serving bowl. Add the lemon zest and juice and drizzle with the garlic oil. Season with salt and pepper, to taste, and toss the ingredients until well-combined and coated in dressing. Serve as a yummy chopped salad or as a dip with more endive leaves.

The roasted tomato-bread soup will serve four to six; and the white bean salad will serve four; both can be adjusted as needed. Roasted tomato-bread soup and white bean salad combine for a perfect light, summer vegetarian meal that will work well as the main offering for your next Meatless Monday lunch or dinner. If you are serving these dishes as the main course for dinner, you may want to accompany it with a side salad with either a balsamic vinaigrette or Italian dressing. Enjoy!

Greetings fellow organic garden enthusiasts.  Well this has been both the best of times and the worst of times for my arbour project - actually for the season on the whole but that’s for a future blog.  For those that have not been reading my organic garden reports, here’s a Reader’s Digest recap. The garden center where I purchased my plants mislabeled the seedlings so I accidentally bought Sicilian zucchini planets instead of the everyday garden variety zucchini. Not a good mistake if you’ve never grown them before as I’ve learned (and written about).  I am sure that the Sicilian zucchini’s are incredible fare but you need some sort of degree to grow them as they started to take over my garden in almost a maniacal fashion. After trying the suggestions from my research (that included a call to Martha Stewart’s radio show) I decided to build an arbour for it to grow in/on. That pretty much catches us up to where we are now and, I am sad to report, that my arbour has been in trouble.

The bamboo I decided to reuse from the teepee experiment slowly fell off the arbour one by one. I was trying my best to make this a zero waste project but I’ve had to store them for use in a future project. I had to use more scrap wood along the top but luckily the very handy person who helped me construct the arbour had plenty on hand. I have no idea why or how scrap wood becomes so plentiful but I’ve learned it certainly comes in handy - waste not, want not.  Unfortunately (the worse of times), I lost a few of the tentacles of the Sicilian zucchini plant. They had created a basket like weave through the slats of my fence and sadly the trauma of being moved killed them. Luckily (the best of times), the move did not kill all of the plants as I first thought as some tentacles thrived and continued to grow up the sides of the arbour. 

I am shocked that this worked because this plant has a mind if it’s own and does not like to be moved or tamed. I sometimes have thought that it might be easier to have livestock in my little suburban backyard rather than this zucchini plant.  Overall it seems that the measures taken to try and restrain this garden dictator have worked although I would label the arbour project a work in progress still.  Shockingly, in all this foliage, there is not even one little zucchini so far and I fear all my efforts throughout the summer may be for naught. Well I learned a lot actually so if nothing else I’m wiser. 

If this season has taught me anything it was to have fun with your organic garden (regardless of what it yields) while it lasts.  As I start to feel a bit of a chill in the air here in Southern Ontario, I’m reminded we’re nearing the end of the season all too quick.  As frustrating as it has been, I know I will look back and miss (but never forget) my summer-long battle with my Sicilian zucchini when my backyard is snow covered.

If you grew up in the same era as I did and music played a significant part of your life, you’ll already be very familiar with Chrissie Hynde the vocalist who founded the band The Pretenders in 1978. Since their first album in 1979 The Pretenders have remained a going concern for over 30 years now although there have been lineup changes Chrissie Hynde has always remained at the front of a band who were hugely popular in the 1980s. Hynde’s public profile has been high for many years and not just due to her music, as she has been an avid campaigner for animal rights groups and has been an active part of PETA and Viva! for many years. It’s always great when a musician has something to say about social issues of any sort especially when their time is also spent actively supporting groups that benefit the world as a whole. Hynde has long been a dedicated vegan and has even opened her own vegan restaurant back in her hometown of Akron, Ohio.

Chrissie has also had some high-profile romances including Ray Davies of The Kinks, Jim Kerr of Simple Minds and renowned artist Lucho Brieva. In fact her most recent relationship with producer/musician JP Jones has resulted in the two of them launching a brand-new eco-friendly line of clothing. As you would expect the new clothing line contains numerous items that are not just environmentally friendly but also stylish with more than a hint of rock ‘n roll.

The company is called Fairground Luck and will contain no animal skins and all products will be made in an eco-friendly fashion. While the high-end line is targeted towards musicians essentially anything could be worn by anyone such as stylish T-shirts, skinny jeans, faux leather jackets and cowboy boots. Chrissie believes not enough choice exists when one comes to choosing clothing with a rock sensibility. She adds:

“Like most women, I love fashion and clothes. I love handbags and shoes. Everybody will be able to find everything they love in a non-leather version, fashion should be fun. I’ve thought about this for years. How to get non-leather cool boots and stuff. Ask EmmyLou Harris what her favourite boots are, and get Todd Oldham to design them”

The product line will definitely have a certain amount of flair attached to it seeing as famed designers Todd Oldham and John Bartlett have worked with Hynde on the entire product catalog. Fairground Luck does not yet appear to have a website that is live but I’m sure that will follow in the weeks ahead. But in the meantime I suggest you stop your sobbing, keep your brass in pocket because these new clothes will be the talk of the town. If you’re a Pretenders fan you know what I’m saying!

There are few things I obsess over more than football (soccer) and the club I’ve supported since I could walk - Arsenal. The team from North London are one of the better sides in England and boast a tradition that is rich in success and heritage. One thing I’ve noticed in recent years is the home playing shirt moving further and further away from the normal shirt I grew up with. Very simple really, red shirt with white sleeves and a white neck, it’s the shirt they wore with perfect consistency throughout the 70’s,80’s and into the 90’s but recent marketing opportunities (the home shirt usually is updated every other season) has seen stripes on the shoulders, across the chest and down the sides of the shirt. My team were looking less distinctive and many supporters (myself included) were tired of the ‘progress’.

This July the club announced a return to tradition as the shirt manufacturer Nike promised a shirt that would fully embrace the tradition of the club, and yes they really delivered. Better still the Nike shirts are the most environmentally friendly club shirt in world football! Nike also make the shirts for some other teams but we have no need to mention them of course..so back to the shirt.

The new kit highlights Arsenal’s old school design and adds lightweight design and recycled fabric.  The shirts use recycled polyester fabric and each shirt uses up to 8 plastic water bottles from waste recycling sites in Japan and Taiwan. After being cleaned fully the bottles are reduced into very small flakes, then melted into a yarn and spun to make the kits. In addition the revised process for manufacturing the shirts is proving to be more environmentally friendly, using 30% less energy versus making traditional polyester shirts and shorts.

It probably comes as no surprise to learn that the shirts being eco-friendly has far more impact than just the 11 players who will be wearing it throughout the season. Replica shirt sales are big business not just in the UK but worldwide, in fact since moving to their new stadium which greatly enhanced revenues Arsenal  have moved into third place amongst the wealthiest football clubs on earth and amongst the ten most valuable sporting club franchises in the world. Sales of replica shirts are estimated to reach 400,000 in the UK and in excess of 2 million globally. When you add on those numbers the value of the new kit design from Nike is that much more significant. Indeed there is an entire culture around football shirts, just check this site more information.

Nike have reams of information about how the shirt stretches more and breathes better, though I must say I’m more concerned with how great it looks and the fact that it is a greener product than a year ago. I’ll give my final verdict on the shirt a few months into the season and see how it makes us play. I really hope it’s a lucky shirt, I’d hate to have to shun something so eco-friendly! After two games we’re second in the league so I’m hopeful.

While the immediate attention in Pakistan concerns flood relief efforts that have impacted a huge percentage of the land and in turn the population and the lingering impacts on environmental scale may be equally concerning once the waters have receded. The traditional rainy season has been extremely harsh the summer resulting in the worst flooding in living memory causing the deaths of several thousand and the loss of homes for many millions more. Three weeks of extreme flooding has caused rivers to become lakes and entire towns to be submerged underneath dirty brown water, the immediate concerns are of course humanitarian in nature as disease increases while the entire infrastructure of the inner regions of Pakistan is crippled by the flooding.

The crisis itself has grown rapidly over the last few weeks, while gaining a full and proper assessment of the damage is very difficult to compile. Even while governments and aid agencies are coming together to provide some degree of relief to Pakistan a government report published today looks at the long-term potential implications caused by the flooding and the damage ecologically to the nation. The two highest concerns are naturally water supplies and the impact on agricultural infrastructure and therefore the food supplies for the nation.

Experts are suggesting that this is the worst flooding to impact Pakistan for many generations, as a result gauging the impact is extremely difficult for the country now has a population estimated at 170 million as opposed to just under 50 million in 1960. The pressures on the food and water supplies for Pakistan are naturally greater than the last time such devastating weather impacted the country. The primary source for water in Pakistan is the now overflowing Indus River and beyond the flooding itself is the damage to sanitation and sewage plants caused by the flooding. Even before this event international observers had published reports expressing that the burden on the food  infrastructure and security of distribution was already approaching a crisis level. The flooding can only emphasize just how stretched the food management chain within Pakistan currently is. The immediate aid will hopefully bring a level of stability to those displaced and bring urgently needed help to curtail what is rapidly turning into a major health crisis. It’s the period of time after the flooding that perhaps should bring the most concern. How best to provide the crop assistance, irrigation and sanitation support as well as ensure that food and water can be transported equitably and smoothly into the central region of the country which is under such intense pressure at the moment.

It will of course take great organization and planning to help Pakistan through the immediate weeks but also to safeguard the food and water distribution within the country. The United Nations will take an active role with such planning and we must hope the environmental impacts of the flooding do not bring heightened instability to the country which would be the last thing it needs.

Welcome back to the Sustainable Scribe for another Meatless Monday recipe.  Meatless Monday is an earth-friendly global movement to eat meat-free on Mondays which reduces consumption of animal products in favor of more plant-based meals to combat global warming and improve personal health.  This week, we feature a kid-friendly meal from exuberant Food Network star and TV host Guy Fieri.  This recipe for Roasted Corn Quesadillas is straight from his show ‘Guy’s Big Bite’:

Ingredients:

• 1/4 cup chipotle peppers in adobo sauce, minced
• 1/2 lime, juiced
• 1 cup sour cream
• 3 ears white corn on the cob
• 2 tablespoons olive oil
• 1 jalapeno, seeded and minced
• 1/4 red onion, diced
• 1/2 cup black beans
• 2 Roma tomatoes, diced
• 2 tablespoons diced roasted red bell peppers
• 1/2 teaspoon sea salt
• 1/2 teaspoon freshly ground black pepper
• 1/2 teaspoon ground cumin
• 6 tablespoons freshly chopped cilantro leaves, divided
• 6 ounces Jack cheese, shredded
• 6 ounces Cheddar, shredded
• 8 medium flour tortillas
• 5 tablespoons, sliced scallions

Directions

1. Preheat grill to high. Preheat oven to 375 degrees F.

2. Mix diced chipotle, lime juice and sour cream, and refrigerate for 1 hour.

3. Over medium flame or on a grill pan, roast corn. Let cool and cut kernels off cob.

4. In a medium saute pan over medium-high heat, add olive oil, jalapenos, red onions, and black beans. Saute until the onions are translucent. Add the tomatoes, corn kernels and roasted bell pepper. Stir and saute for 3 minutes and add salt, pepper, cumin and 3 tablespoons of cilantro. Remove the pan from heat and let rest.

5. Evenly distribute mixture, the remaining cilantro and cheeses among 4 tortillas. Top with remaining tortillas.

6. Place tortillas on a baking sheet and place in the oven. Cook for about 10 minutes, until cheeses have melted and the quesadillas are warmed through. Cut each into 6 pieces.

7. Serve with chipotle sour cream garnished with scallions.
